Pink Dove
Author Notes: This is a non-alcoholic nod to the Paloma. It’s tart and refreshing soda with a pale pink hue. Seedlip Garden 108 adds sophistication to the grapefruit and lime. —hardlikearmour
Makes: 1 cocktail/ about ½ cup syrup
Pink Dove
- 2ounces Fresh pressed pink grapefruit juice
- 1 ounce Seedlip Garden 108
- ½ ounce lime syrup (recipe follows)
- ¼ ounce lime juice
- Ice cubes
- Seltzer
- Stir grapefruit juice, Seedlip, lime syrup and juice to mix in an 8 to 10 oz glass. Carefully fill the glass ½ to ⅔ with seltzer, and gently stir. Add ice. Garnish with a grapefruit twist or lime wedge if desired.
Lime Syrup (adapted from Stella Parks’ fresh lemon syrup recipe found at Serious Eats)
- ~225 grams Juiced lime rinds (~5 smallish limes)
- 100 grams baker’s, superfine, or castor sugar
- Cut the lime rinds into large chunks. Combine with sugar in a glass jar or non-reactive bowl. Cover tightly. Stir periodically (every 30 to 60 minutes) until the sugar has dissolved (several hours).
- Strain syrup through a fine mesh strainer, into another glass jar or glass measure. Transfer the rinds in batches to the ricer and squeeze so the juice passes through the strainer. Store in the refrigerator; it should keep for 2 to 3 months.
