1 pint cherry tomatoes, quartered lengthwise
4 green onions, sliced paper thin
1 (8 ounce) block of feta, crumbled into tiny pieces (don’t buy crumbled)
1/4 cup grated parmesan
1/3 cup extra virgin olive oil
Juice of 1 lemon
1 teaspoon dried oregano or Italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
1 baguette

Add all ingredients (except the baguette) to a platter (not bowl, it looks boring in a bowl) and use your hands to gently toss just to combine. Don’t overmix or the feta will smoosh and make everything look kinda meh. Taste and season with more salt if needed.

Thinly slice the baguette and place on a baking sheet. Toss to coat lightly in olive oil. Spread into an even later and broil for 1 minute per side. Watch the bread the entire time you’re broiling it!! It burns quickly.
