how to make any roasted vegetable look like you paid $25 for it at a cool restaurant using stuff you already have in the pantry | Caroline Chambers

step 1: sauce swoop. I used the Trader Joe’s garlic sauce. pesto, a yogurt sauce, hummus, any sauce you love will prob work.

step 2: pile roasted veggies on top. pretty much anything works here. I tossed cauliflower in oil, salt, and @dalkinandco lemon pepper and roasted on the bottom rack (closest to the heating element so it browns nicely) on 425 for 30-40 minutes. I don’t flip it I just get the nice browning on one side, but you can!

step 3: soft chopped herbs. lots of ’em.

step 4: crunchy thing like toasted nuts or a crouton or toasty breadcrumbs. I like to really finely chop the nut / crouton. I used pistachios.

step 5: certain dishes also work with a sweet thing. dates, raisins, cranberries, fresh thinly sliced apple… I used dates
